autumn patties


Vegan autumn patties


  • Scrapings of 1 Halloween pumpkin

  • Tin of chickpeas

  • 1/2 a red onion

  • 2 cloves garlic

  • Gram/chickpea flour (I am gluten free, if you are not, feel free to use plain wheat flour)

  • Mustard

  • Smoked paprika

  • Rosemary

  • Salt and pepper


  1. Place pumpkin in a pan and just cover with water. Bring to boil and cook for 5 minutes.

  2. Meanwhile drain chickpeas and place in a bowl. Mash well with a potato masher.

  3. Drain pumpkin well (it is naturally watery so really try to drain it), add to chickpeas.

  4. Finely dice your onion, smash/mince/puree your garlic, add them in along with 1 heaped teaspoon of mustard powder/paste, 1 heaped teaspoon of smoked paprika, 1/2 teaspoon of dried rosemary, salt and pepper

  5. Add in 3 heaped teaspoons of gram flour to thicken up the mixture

  6. Heat a good nonstick pan to medium high, spoon the mixture into the pan in a circular shape (it should sizzle). You want your patties to be no more than 2cm thick. Put a lid on and turn the heat down to medium.

  7. Cook for 4 minutes or until they release easily from the pan, flip, recover and cook for a further 4 minutes

I gave my dad his in a cinnamon bagel bun with pesto, lettuce, and cheese, but you can dress them however you like!

Also the seasoning amounts are approximate cos I measure that stuff with my heart!
